Get your mind out of the gutter! I’m talking about a quick, easy MEAL!
I saw a recipe for whiskey-glazed carrots over on The Pioneer Woman, and I got it in my head that I had to make something with a whiskey glaze. So I decided to make Whiskey Glazed Tilapia.
All you really need to know is how to make the glaze, but I will give you the run-down on what I did.
First, I melted a little less than half a stick of butter in a skillet on high heat. Then I added in my fish and let it cook until it was almost done. I removed the fish and put it on a plate. Then I measured out a half a cup of whiskey (any kind will work, I just happened to have American Honey available, which is why I think mine was so sweet). I added it to the skillet, while still on high heat. I like to hold my skillet a little off the burner when adding in alcohol, and be very careful if you have a gas stove with an open flame. I don’t want you to burn down your house! After most of the alcohol has “cooked out” of the whiskey, I added the rest of the stick of butter in (I said delicious, not healthy!). I turned the heat down to medium, and after most of the butter had melted, I dumped in my brown sugar. I used a cup, but you can take it down to 3/4 a cup to help cut the sweetness. I mixed it all up until the sugar had dissolved and it was starting to bubble, then I put the fish back in and cooked it until it was done. You can also add some salt to help with the sweetness, because mine was super sweet and I didn’t put any salt in. It’s all about personal preference, baby.
You could probably put this glaze on anything and it would be so good you might want to die!
I tried to get in my four miles again last night, but I’m just not getting out of the house after work early enough. It just gets too dark for where I run! When did the sun start setting at 7 p.m.? Where can I move so that the sun always sets at like 9 p.m.? Does such a place exist?
Anyways, I did about 3.5 miles last night. I don’t have an accurate distance or time, because I accidentally restarted my Garmin before I had a chance to document everything…grr! Oh well, not a whole lot I can do about it. Today is a bumday. No work outs, but definitely cake and ice cream for D’s third birthday! I can’t believe he is 3 already. He’s a little goofball, always getting into something or another.
My goal for this weekend is to get in four miles on Saturday, and *at least* an additional four miles on Sunday, if not 5. It depends on a) how I’m feeling and b) if I’m motivated enough!
I might post this weekend, if I can find the time. But I have lots of me stuff planned so I don’t know how it will work out!
